If you've shopped from our Farm Stand and are look If you've shopped from our Farm Stand and are looking for inspiring recipes -- we have a solution for you! Our Distribution Coordinator, Julia Meyer, loves whipping out delicious recipes, and we love sharing them!

Here is Julia's recipe for the "Best Breakfast Tacos"!

Ingredients:
Olive oil
1 small onion, diced
2-3 mild peppers, diced
1/2 lb yellow potatoes, diced small
1 jalapeño, diced
3-4 eggs
Small tortillas
Cumin, paprika, garlic powder, salt + pepper
Optional toppings; Salsa, avocado, cilantro, shredded cheese

Instructions:
In a large skillet, add about an inch of well salted water and diced potatoes. Bring to a simmer and leave for 5-7 minutes, or until potatoes are fork tender.

Drain water and after turning heat to medium high, add in 2 tbsp oil or butter, as well as onion, pepper, jalapeño, cumin, paprika, salt, pepper, garlic powder, and mix to coat. Sautéed for about 5-7 minutes until onions are fragrant and translucent, peppers have slightly softened, and potatoes have a developed a crispy edge.

Finally, make space in the pan for the eggs. Crack all three into the pan and scramble into the medley.
Once cooked, add about 1/4-1/2 cup scoops into heated tortillas along with toppings of choice and enjoy!
(Pro tip: briefly wet tortillas on each side with water then heat in a pan for a minute or so on each side until freckled and slightly bubbly.)

Bon Appetit!

Yom Kippur, or the Day of Atonement, is considered Yom Kippur, or the Day of Atonement, is considered the holiest day in Jewish tradition. With a goal to renew, on this day many Jewish people reflect, repent, participate in communal prayer, and/or fast. Through these practices, one might step forward into life more fully and with an awakened commitment to justice, compassion, love of community and of earth, joy, awe, and spiritual growth.

This Yom Kippur, we offer this seasonal Jewish blessing: "May all your heart's desires be fulfilled for the good! Wishing those who observe the fasting tradition an easy fast!
